Mini Bite-Size Meat Pies
Interesting baking - great not only in taste, but also in looks! These bite-size meat pies will please even picky eaters. Juicy filling, crisp dough, and the small size make them a star on any table.

Step 1
How to make mini bite-size meat pies? Prepare all ingredients for the dough. The butter, kefir, and egg should be cold.

Cut the cold butter into cubes.
Step 3
Sift the flour through a fine sieve into a deep bowl. Add the butter pieces to the flour.
Step 4
Rub the flour and butter with your hands into crumbs. To speed it up, you can blend flour and butter in a blender. You may need a little less or more flour - go by the dough’s consistency.
Step 5
Combine kefir with the egg, sugar, and salt and whisk until smooth (a fork or whisk works).
Step 6
Pour the kefir mixture into the flour crumbs and knead a smooth, soft dough. Because there’s a lot of butter, the dough is very pliable and elastic.
Step 7
Roll the dough into a ball. It should be fairly firm and hold its shape well.
Step 8
Wrap the dough in a bag or plastic wrap and refrigerate for 3-4 hours. This chills it so it won’t tear when rolling. If you make it the night before, let it stand at room temperature for 20-30 minutes before rolling so it becomes more elastic.
Step 9
Prepare the filling ingredients. You can use any ground meat. For juicier pies, mixed ground meat is best. I used chicken ground meat and a pork-beef mix.
Step 10
In a bowl, combine the meats, mayonnaise, vegetable oil, and spices (any you like).

Mix well. You can also add a finely chopped onion to the filling.

Divide the dough into 3-4 parts.

Roll each part into a thin circle on a floured surface and cut out circles using a glass.
Step 14
Place about 1 tbsp of meat filling on each dough circle.

Pinch the edges tightly to seal.

If you like, make a decorative crimp by gathering the edges around a toothpick.

Place the pies on a baking sheet lined with parchment and lightly greased with vegetable oil. If you want, brush the pies with beaten egg. I didn’t, since the dough contains a lot of butter. Bake for about 30 minutes in a preheated 180°C / 356°F oven. Adjust time and temperature to your oven.
Step 18
Remove the toothpicks from the baked pies. Serve the mini oven-baked meat pies. Enjoy!
