Preparation
Step 1
How do you make minced meat patties stuffed with egg? Prepare all the necessary ingredients. Use any minced meat you like. If you buy ready-made mince, choose good-quality mince without additives. But it is even better to grind it yourself. I used pork and chicken. Use large eggs and refined oil. Choose the herbs according to your preference; any you have on hand will work. I used green onion and parsley.
Step 2
Boil the eggs. How do you boil them? Carefully place 3 eggs into a small saucepan and cover them with cold water. Set 1 egg aside for later, it will be needed in step 9. Bring the water to a boil over high heat, then reduce the heat to medium and cook for 10 minutes. Pour cold water over the eggs so they will peel more easily, and let them cool completely.
Step 3
Cut the loaf into slices and soak it in milk. I replace the milk with water because I do not like its taste in cutlets. Leave it for 5 minutes, then drain the milk and squeeze the loaf very well. If too much liquid remains, the mince will spread and you will not be able to shape the patties. Mash the soaked loaf by hand or with a fork into a smooth paste.
Step 4
Peel the onion, rinse it, and cut it into small cubes. This way it will cook faster.

Peel the eggs and cut them into pieces no larger than 1 × 1 cm, about 1/2 × 1/2 inch.
Step 6
Wash the herbs under running water, dry them on a towel or napkin. Trim off the tough parts and chop the herbs with a knife.
Step 7
Use a frying pan to sauté the onion. Heat the pan over medium heat, carefully pour in 1 tablespoon of vegetable oil, and add the chopped onion. Fry over medium heat, stirring occasionally, for about 2 minutes. The onion should soften and begin to turn golden. Let it cool completely.
Step 8
In a deep bowl, mix the chopped eggs, herbs, and onion. Add a little salt and stir until evenly combined. The filling is ready.
Step 9
In a deep bowl, convenient for mixing, place the minced meat, the soaked loaf, and crack in the remaining egg.
Step 10
Add salt and knead the mince until smooth. The longer you knead it, the easier it will be to work with later. It took me 10 minutes.
Step 11
Now shape the patties. This amount of ingredients makes 8 pieces. I made 6 large ones and 4 smaller ones to steam. That is why they fit in my 20 × 30 cm, about 8 × 12 inch, pan. For baking all the patties, use the largest baking tray. Grease it with oil. Take a full palmful of mince, shape it into a ball, and flatten it into a patty about 1 cm, about 1/2 inch, thick. Place 1 level tablespoon of filling in the center.
Step 12
Carefully lift the edges of the mince and seal the filling inside so it stays completely enclosed. Place the patty seam-side down on the baking tray. Shape the remaining patties the same way and place them on the tray. Bake in the oven at 190°C (375°F) for about 40 minutes. The cooking time may vary depending on your oven. Let the finished patties cool slightly and serve. Enjoy your meal!
