Millet Kulesh with Lard
An old Ukrainian dish, two in one: both soup and main course! Millet kulesh with lard is an easy-to-cook soup, often included in camping and fishing menus. It’s simple to make and can even be cooked over an open fire - which only makes it tastier!

Step 1
How to cook millet kulesh with lard? Place a pot of water on the stove and bring it to a boil. Add rinsed millet to the boiling water and cook.
Step 2
While the millet is cooking, wash, peel, and dice the potatoes. The cubes shouldn’t be too large, so they can cook through while the millet finishes cooking. But don’t make them too small either.
Step 3
Add the potatoes to the pot with the boiling millet, stir, and continue cooking over medium heat. If the water boils too vigorously, reduce the heat slightly.
Step 4
While the soup cooks, cut the lard into small cubes.
Step 5
Wash, peel, and dice the onion and carrot. If you prefer, you can grate the carrot using a medium or coarse grater.
Step 6
Fry the lard in a skillet without oil until golden. Add the chopped onion and carrot. Lightly sauté the vegetables with the lard, stirring occasionally, until the onion turns golden.
Step 7
Add the lard and vegetables to the soup. Season with salt and pepper to taste. Cook until the potatoes are fully tender.
Step 8
When the kulesh is ready, add freshly chopped parsley. Wash and dry the parsley beforehand. Enjoy your meal!
