Preparation
Step 1
How do you cook spicy Mexican soup with beans, corn, and ground meat? Prepare the necessary ingredients. Instead of canned beans, you can use dried beans. Soak them overnight in plenty of cold water, then boil until tender for about 1 hour.
Step 2
You can use already chopped tomatoes, or take whole tomatoes in their own juice and cut them into small pieces, removing the skin.
Step 3
Drain the liquid from the canned beans and corn. You can also rinse the beans additionally.
Step 4
Heat the vegetable oil in a deep pan. Add the ground meat and fry it, stirring and breaking up any lumps, for about 10–12 minutes.
Step 5
Add the tomatoes in their own juice to the pan. Mix everything and simmer for another 2–3 minutes.
Step 6
Transfer the ground meat with tomatoes to a pot. Add the canned beans and corn. Add the cumin, dried garlic, ground chili pepper, and mix.
Step 7
Pour in the meat broth. Bring the soup to a boil and cook over low heat at a gentle simmer for about 7–10 minutes. At the end of cooking, taste the soup and add salt and pepper if needed.
Step 8
Remove the finished soup from the heat, cover with a lid, and let it stand for about 10 minutes.
Step 9
Ladle the soup into bowls and sprinkle with herbs to taste. Enjoy!
