Merchant-Style Buckwheat with Pork in a Skillet

Step 1
How to make merchant-style buckwheat with pork in a skillet? Prepare all the necessary ingredients. Use boneless pork. A little fat is fine - ham, neck/shoulder, or tenderloin work well. For cooking buckwheat I always use a buckwheat-to-water ratio of 1:2, so it’s convenient to measure with glasses/cups.
Step 2
Cut the pork into small pieces of roughly the same size. Heat the skillet until hot and add a little vegetable oil. Sear the meat until golden. Stir so it doesn’t burn.
Step 3
While the meat is frying, prep the vegetables. Peel the onion and carrot and rinse under running water. Chop the onion as you like (I usually dice it). Grate the carrot.
Step 4
Rinse the buckwheat groats several times in cold water. Drain off the excess water.
Step 5
Add the chopped vegetables (onion and carrot) to the browned meat. Stir and fry everything together for a couple of minutes, stirring.
Step 6
Pour a little water (from the total amount) into a cup and dissolve the tomato paste in it.
Step 7
Add the rinsed buckwheat to the skillet and pour in the water mixed with tomato paste.
Step 8
Add the remaining water as well. Season with a little salt and spices to taste. Bring to a boil. Then cover with a lid and reduce to low heat. Cook the merchant-style buckwheat with pork for about 15 minutes.
Step 9
From time to time, push the buckwheat aside at the edge and check how much water is left at the bottom. When there’s no water left, remove the skillet from the heat. The dish is ready!
Step 10
Portion the finished dish onto plates and serve, adding fresh vegetables if you like. Enjoy!
