Meatball Noodle Soup
Incredibly tasty, from simple ingredients, for the whole family! Meatball soup with vermicelli and potatoes is great for everyday meals. Kids like it too - tested many times! You can cook it not only in a pot, but also in a multicooker. And instead of vermicelli you can add any grain or small pasta.

Preparation
Step 1
How to cook meatball noodle soup? Prepare everything you need. Peel the potatoes, onion, and carrot. Rinse the peeled vegetables. You can use any meat for the meatballs. I’ll use pork.
Step 2
Cut the pork into pieces and grind it with a meat grinder. Grind half of the onion after the meat. Put the minced meat into a large bowl, add the egg, salt, and a little seasoning. Mix well so everything is evenly combined.
Step 3
Pour water into a suitable pot for the soup and set it over heat. Bring the water to a boil. Shape the minced meat into small meatballs with your hands and drop them into the boiling water. Why boiling? In boiling water the meatballs “set” on the outside and won’t fall apart as they cook. Bring everything back to a boil. Skim off any foam that forms.
Step 4
Cut the peeled potatoes into small pieces and add them to the pot with the meatballs. Cook everything together for 15-20 minutes.
Step 5
Finely chop the remaining half of the onion. Grate the carrot on a medium grater.
Step 6
Pour a little vegetable oil into a hot skillet, add the chopped onion and grated carrot. Sauté for 3-4 minutes over medium heat, stirring so the vegetables don’t burn. Add the sautéed vegetables to the soup pot.
Step 7
At the end of cooking, add the prepared vermicelli to the boiling soup. Cook for 3-4 minutes. Add a little salt and spices.
Step 8
If you like, add some chopped herbs. I especially love adding fresh dill to soups. Remove the pot from the heat and let the soup stand covered for about 10 minutes.
Step 9
Ladle the finished soup into bowls and serve. You can add a spoonful of sour cream. Enjoy!
