Meat Pie from Rich Yeast Dough

Preparation
Step 1
To make a delicious rich yeast pie with filling, prepare the necessary products and spices.
Step 2
Pour 150 ml warm boiled water and 150 ml room-temperature milk into a large bowl (equal parts).
Step 3
Add 1 tbsp sugar and 15 g fresh yeast to the bowl.
Step 4
Add 3 tbsp flour.
Step 5
Mix everything, cover the bowl with a towel, and leave in a warm place for 15–20 minutes to activate the yeast.
Step 6
Pour 50 g melted butter into the bowl with the sponge.
Step 7
Crack 1 egg into a small bowl, add 1 tsp salt, and beat well, breaking up the egg-white strands.
Step 8
Pour the egg mixture into the bowl with the sponge and mix well.
Step 9
Sift 400 g wheat flour into the bowl with the sponge.
Step 10
Stir clockwise and knead the dough.
Step 11
Knead the dough well by hand for 5-7 minutes and shape it into a ball.
Step 12
Place the dough in a bowl, lightly grease the top with vegetable oil, cover with a towel, and leave in a warm place to rise for 1 hour.
Step 13
Pour 2 tbsp vegetable oil into a skillet and heat it. Add 300 g minced meat of your choice and fry, stirring.
Step 14
Grate 1 onion on a coarse grater, add it to the skillet, and fry together with the meat, stirring.
Step 15
Cut 1 bell pepper into small cubes, add to the skillet, and fry for about 2 minutes over high heat, stirring.
Step 16
Add salt, khmeli-suneli, coriander, and a mixed pepper blend to taste, and stir.
Step 17
Reduce heat to low, cover with a lid, and simmer the mince for about 10 minutes until fully cooked.
Step 18
Transfer the mince to a deep bowl, add 2 tbsp mashed potatoes, and mix.
Step 19
After the time has passed, lightly flour the table, place the dough on it, and press it into a thick flat cake.
Step 20
Roll the dough with a rolling pin into a large rectangle 2-3 mm thick.

Place the required amount of filling along the long edge of the rectangle.

Cover the filling with dough, then seal and pinch the edges well.

Twist the dough strip and evenly spread the remaining filling.

Twist the filled strip two more times and tuck the edges well. Then make cuts along the edge every 1.5 cm.
Step 25
Roll it into a tight spiral/roll and seal the edges well. Very carefully transfer it seam-side down onto a parchment-lined baking sheet and shape the pie. Leave in a warm place to proof for 40 minutes.

After proofing, brush the pie with egg yolk beaten with a little milk. If desired, sprinkle with sesame seeds. Bake in an oven preheated to 170°C / 338°F.

Bake for about 40 minutes until golden, then remove from the oven and place on the counter.
