How do you make mascarpone cream with whipping cream? Prepare the ingredients. Use cream with the highest fat content, at least 33%. If the cream has less fat than indicated, it will not whip and the cream will turn out runny. The cream must be well chilled. Powdered sugar can also be made at home using a countertop blender or a coffee grinder. The mascarpone cheese should also be chilled.
Step 2
Prepare a deep bowl for whipping. This is needed so that the cream does not splash.

Add the prepared powdered sugar to the cream and turn the mixer on at low speed so the powdered sugar has time to dissolve in the cream.
Step 4
Whip the cream with the powdered sugar until soft peaks form. As soon as the cream begins to thicken, stop whipping.
Step 5
Add the mascarpone to the bowl. Turn the mixer on at low speed only so that the cheese mixes with the cream. Do not whip it. Why should you not whip it? Mascarpone has a very high fat content. If you whip it, liquid will begin to separate and everything will turn into butter.

Mix the finished cream a little more with a silicone spatula so it gets a more even texture.

This cream is very tasty and delicate. It holds its shape very well. It can be used for filling sponge cake layers and assembling a cake.

It also soaks honey cake layers and open layers well when making a number cake. I do not use this cream for smoothing the outside of a cake, because it is too heavy for that. But it is perfect for piping swirls on cupcakes or filling cream puffs. It always looks very beautiful. Use the finished cream as needed!
