Marinated Carp
Tasty fish appetizer with fragrant spices! Marinated carp is a great match for boiled potatoes and a cold beer. Serve as a standalone snack or on sandwiches. It’s very tender, mildly salted, and really delicious.

Preparation
Step 1
How do you marinate carp? First, prepare all the ingredients.
Step 2
Make the marinade (its flavor determines the fish). Pour water into a pot. Add sugar and salt. Add coriander seeds, mixed peppercorns, and bay leaf. Bring to a boil over high heat. Stir well until the sugar and salt dissolve. Turn off the heat and add table vinegar. Let cool completely.
Step 3
Prepare the fish. You can use fresh or frozen carp. If frozen, move it from the freezer to the refrigerator and thaw completely. Separate the fillet from the backbone. If the fish is fresh, scale it. Trim off all fins. Remove the head and innards. Rinse well.
Step 4
Slice the fillet into thin slices. Rinse well again under running water.
Step 5
Place the carp into the cooled marinade. Put a small flat plate on top (smaller in diameter) so all pieces stay submerged. You can place a small weight on the plate. Cover and refrigerate for 10-12 hours.
Step 6
Rinse the dill well and pat dry with a towel. You can use parsley or other herbs. Peel and rinse the onion, then slice into thin half-rings.
Step 7
Choose a suitable container for marinating. I used a plastic bucket with a lid; you can use a glass jar. Layer carp, onion rings, and dill all the way to the top. Press down lightly so the fish fits snugly.
Step 8
Pour in neutral vegetable oil so all the fish is covered by a layer of oil. Cover and refrigerate for a couple of hours. Then you can taste it. Marinated carp is ready. Store in the refrigerator for no more than a week.
