Maple-roast parsnips
Sweet and simple maple-roasted parsnips, caramelised in the oven until tender and golden - an easy, comforting side dish.

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Peel the parsnips, then cut them in half across the middle. Slice each piece lengthways into halves or quarters, depending on their size, and transfer them to a roasting tin.
Step 3
Drizzle the oil over the parsnips and toss well so every piece is evenly coated. Pour over the maple syrup and mix again to distribute it evenly.
Step 4
Roast in the oven for 35 minutes, or until the parsnips are soft, golden-brown and lightly caramelised. Transfer to a serving dish and serve hot.
