Mandarin-Shaped Salad

Preparation
Step 1
Prepare all the ingredients for the salad. Scrub the carrots with a stiff brush so no dirt remains. Boil the cleaned carrots until tender - this will take about 50 minutes. I recommend using smaller carrots; they cook faster. While the carrots cool, work on the filling.
Step 2
Hard-boil the eggs; this will take 5-10 minutes. To make them peel more easily, add 1 tsp salt to the water. Grate the eggs on a fine grater for a more delicate texture.
Step 3
Grate the processed cheese on a fine grater as well. Combine the eggs and cheese in a deep bowl.
Step 4
Boil the chicken fillet. Choose chilled, not frozen fillet - after boiling it will keep its taste and juiciness better. Lower the fillet into salted boiling water and cook for 30-40 minutes (time depends on piece size). Cool the cooked fillet and chop it finely; a blender works best.
Step 5
Add the chopped chicken to the egg-and-cheese mixture. Add mayonnaise and mix well. Don’t add too much mayonnaise, or the salad will be runny and won’t hold its shape.
Step 6
Grate the cooled boiled carrots on a fine grater. Finely grated carrot makes shaping easier.
Step 7
Place a tablespoon of grated carrot on plastic wrap and spread it in a thin layer. Roll a ball from the salad mixture and place it on the carrot. Using the wrap, coat the ball with carrot. Gently squeeze in your hands to shape it like a mandarin. Place the finished “mandarin” on a serving plate.
Step 8
Repeat the same steps with the remaining ingredients.
Step 9
Decorate the salad with herbs. Basil leaves work especially well - they resemble mandarin leaves. You can use any herbs you like.
