Madeleines
Light, buttery madeleines with crisp edges and a soft, fluffy centre, baked quickly and best enjoyed warm from the oven.

Preparation
Step 1
Preheat the oven to 200C. Brush a madeleine tray thoroughly with melted butter, then dust lightly with flour, shaking out any excess so the moulds are evenly coated.
Step 2
In a bowl, whisk the eggs and sugar together until the mixture is pale and frothy. Gently whisk in the remaining ingredients until just combined. Leave the batter to rest for 20 minutes before carefully spooning or pouring it into the prepared madeleine tray.
Step 3
Bake for 8-10 minutes, or until the madeleines have risen slightly in the centre and are cooked all the way through.
Step 4
Remove from the oven, turn them out onto a wire rack and allow to cool for a few minutes. Madeleines are at their best eaten within an hour of baking.
