Mackerel Fish Cakes
Crispy mackerel fish cakes made with ginger, onion and soaked bread, pan-fried until golden and perfect served with salad, sweet potatoes or in a roll.

Step 1
You will need two smoked mackerels for these patties. Peel onion and ginger, blend them.
Step 2
Flake the mackerel, carefully removing any bones. You can do this using a fork or your fingers.
Step 3
Soak the bread in water for 2 minutes, then gently squeeze out the excess water and add the bread to the flaked fish.
Step 4
Add the eggs, onions, ginger, pepper and salt, mixing thoroughly until everything is well combined. Shape the mixture into patties.
Step 5
Heat the oil in a pan over a medium heat. Fry the fish cakes for about 4 minutes, turning halfway through, and avoiding overcrowding the pan so they cook evenly.
Step 6
Serve the fish cakes warm or cold, with a salad, alongside fried sweet potatoes, or tucked into a bread roll.
