Macarons with Italian Meringue
Quick and light dessert from simple ingredients! A fairly easy recipe for cookies from egg whites, powdered sugar, and ground almonds with a chocolate and fresh cream filling.

Preparation
Step 1
Prepare all necessary ingredients for this popular French pastry.
Step 2
For the almond dough, place 125 g almond flour in a large bowl. Sift 125 g powdered sugar into it and mix thoroughly.
Step 3
Add 45 g egg white (from one large egg) into the bowl.
Step 4
Mix all ingredients to form the almond dough.
Step 5
For the sugar syrup, combine 125 g sugar, 40 ml water, a pinch of citric acid in a saucepan. Heat on medium until syrup reaches 248°F (120°C).
Step 6
In a deep bowl, pour 45 g egg white. Whip at low speed and slowly pour in the hot sugar syrup, ideally along the bowl’s wall.
Step 7
Once syrup is added, increase mixer speed and whip the meringue until it cools and becomes smooth and glossy.
Step 8
Add one measuring spoon of food coloring to the Italian meringue and mix well.
Step 9
Fold the colored meringue into the almond dough in three portions until smooth and homogeneous.
Step 10
Pipe the dough onto a parchment-lined baking sheet using a pastry bag.
Step 11
Tap the tray lightly on the table to release excess air. Let rest 40-45 minutes at room temperature.
Step 12
Preheat oven to 285°F (140°C). Bake macarons 12-15 minutes.
Step 13
Remove parchment with macarons and let cool slightly.
Step 14
For chocolate ganache, heat 50 ml cream in a saucepan, then add 180 g white chocolate pieces.
Step 15
Add 20 g softened butter and whisk until smooth creamy chocolate mixture forms.
Step 16
Add one measuring spoon of coloring if desired, mix well, and pour into a deep bowl.
Step 17
Fill a pastry bag with cream and pipe desired amount onto macarons.
Step 18
Top with another macaron shell to complete the French macaron.
