Step 1
How to make minced-meat lula kebab on skewers over a charcoal grill? First, prepare all the ingredients. I used ready-made pork mince. You can use any meat or mix a few kinds. If your meat is lean, add 400-500 g lard/fatback (about 14-18 oz / 0.9-1.1 lb). I like lula kebab with bell pepper. You can skip the pepper, but then replace it with onion for juiciness. Pass the meat and fat through a meat grinder and mix everything well.
Step 2
To keep the kebabs from falling apart, the mince must be “beaten” very well. For convenience, beat it in portions for 7-10 minutes, until the mince turns into a smooth, uniform mass.
Step 3
Salt to taste, add ground paprika and allspice, and also coriander. Use any amount and mix of spices you like. Mix everything well.
Step 4
Wash the red bell pepper, pat dry, and remove the seeds. Grate the pepper on a coarse grater. If you use onion instead of bell pepper, finely chop it with a knife.
Step 5
Squeeze the grated mixture thoroughly with clean hands or through cheesecloth. Add the pepper to the mince, and keep the pepper juice in a separate bowl. At this stage you can also add a couple of garlic cloves, pressed through a garlic press.
Step 6
Knead everything well again. Wrap the bowl with plastic wrap and refrigerate for 2-3 hours. Put the pepper juice in the fridge as well to chill.
Step 7
Wash the skewers, rinse with cold water, and pat dry with paper towels. When cooking lula kebab, both the mince and the skewers must be cold - then the mince won’t fall apart. Press the mince firmly onto the skewer, shaping a thin sausage. Place the lula kebabs over the coals.
Step 8
Cook over high heat for 3 to 7 minutes, turning the skewers, until a nice crust forms.
Step 9
Then finish cooking the kebabs over medium heat until done.
Step 10
Using a silicone brush, coat each kebab with the pepper juice.
Step 11
Leave over the coals for 1-2 more minutes.
Step 12
Remove the pork lula kebabs from the grill and serve immediately.
