Low-fat roast potatoes
Extra-crispy oven-roasted potatoes with fluffy centres, parboiled and roasted at a high heat for perfectly golden results.

Preparation
Step 1
Preheat the oven to 230C, or as hot as it will go.
Step 2
Bring a pan of lightly salted water to the boil, add the potatoes and cook for 3-4 minutes. Drain thoroughly in a colander, then use a fork to rough up the edges. Season generously with salt and pepper and spray well all over with cooking oil spray.
Step 3
Transfer the potatoes to a large baking tray and place in the hot oven. Roast for 25 minutes, then remove the tray, turn the potatoes and give them another good spray of cooking oil.
Step 4
Return to the oven and roast for a further 25 minutes, until the potatoes are crisp, deeply golden-brown and crunchy all over.
