Lentil Soup with Meatballs
Exceptionally delicious, hearty, and warming - perfect for a family lunch! Lentil soup with meatballs is very easy to prepare. It turns out rich, bright, and full of flavor. Serve with sour cream or simply with a sprinkle of fragrant pepper. The vegetables can be swapped and combined in different ways.

Preparation
Step 1
What meat is best for meatballs? Use any ground meat: mixed, beef, pork, or poultry. I used store-bought pork mince.
Step 2
Peel potatoes, onion, and carrots. Rinse all vegetables under clean running water. Remove seeds and core from bell pepper. Peel the tomato if needed.
Step 3
Finely chop one onion and add it to the ground meat. Salt to taste. Mix thoroughly. You may add spices or garlic powder if you like.
Step 4
Scoop the meat mixture with a teaspoon and form small meatballs. Shape all the mince the same way.
Step 5
Rinse the lentils several times until the water runs clear. Cut the potatoes into small cubes or sticks.
Step 6
Bring water or broth to a boil in a pot. Add the potatoes, meatballs, and lentils. When it boils again, salt the broth to taste, reduce heat to medium, and cook until the potatoes and meatballs are done - about 15–25 minutes.
Step 7
Meanwhile, prepare the sauté. Grate the carrot on the large holes. Chop the second onion and bell pepper.
Step 8
Cut the tomatoes into medium cubes and set aside - they will be needed in step 10.
Step 9
In a skillet, sauté the onion, carrot, and pepper in oil until soft. Stir so nothing burns.
Step 10
When the potatoes are soft, add the sauté, tomatoes, and bay leaf to the pot. Bay leaf can be omitted if desired. Bring to a boil, add finely chopped herbs, and remove from heat.
Step 11
Let the soup rest for 10-15 minutes and serve.
