Lentil and tomato soup

Preparation
Step 1
Heat the oil in a small saucepan over a medium heat. Add the chopped onion and garlic and cook for 2-3 minutes, stirring, until softened and fragrant.
Step 2
Stir in all the remaining ingredients, seasoning with black pepper to taste, and bring the mixture to the boil. Reduce the heat and let it simmer gently for 20 minutes.
Step 3
Serve straight away, or allow to cool before storing in the fridge or freezer for convenient lunches later on.
