Lenten Pasta with Vegetables and Mushrooms

Step 1
How do you make lenten pasta with mushrooms? Prepare all the ingredients. If you can, buy an egg-free pasta (it doesn’t have to be long). Choose tomatoes that are juicy but firm - soft ones won’t hold their shape; during chopping and cooking they’ll turn into a shapeless mass and ruin the look of the dish. You can swap or add vegetables to taste.
Step 2
Rinse the mushrooms well, pat dry, and slice. Any mushrooms work; I used button mushrooms.
Step 3
Rinse the cherry tomatoes, pat dry with paper towels, and cut in halves. You can use regular tomatoes instead and cut them into wedges.
Step 4
Remove the seeds and stem from the bell pepper and cut it into thin strips.
Step 5
Rinse the parsley, shake off excess water, and finely chop. If you like, replace or add other herbs - dill, green onion, or a mixed herb blend. It’s best not to sauté fresh basil because it darkens quickly; instead, garnish the finished pasta with a basil sprig.
Step 6
Heat vegetable oil in a skillet over medium heat. Add the mushrooms and sauté, stirring, until golden.
Step 7
Add the tomatoes, bell pepper, pressed garlic, and spices to the mushrooms. Cook over low heat, stirring, for 3-5 minutes. It’s important that the vegetables keep their shape and don’t break down - especially the tomatoes.
Step 8
At the end, add the chopped parsley and stir.
Step 9
While the vegetables cook, boil the pasta in a pot of plenty of salted water until al dente (about 1 minute less than the package instructions). Drain the pasta in a colander and let the water run off.
Step 10
Add the spaghetti to the skillet with the vegetables. Heat everything together for 1 minute.
Step 11
Divide the pasta among plates and garnish with any herbs (I used basil). Serve the lenten pasta. Enjoy your meal!
