Lazy Skillet Khachapuri with Cheese (Kefir Batter)
Fast, tasty, simple, inexpensive, and filling! These lazy cheese khachapuri in a kefir batter can be made right for breakfast - about 20 minutes tops. They’re great with coffee or tea, and you can also serve them with any main course.

Step 1
How do you make lazy khachapuri? First, prepare the ingredients. You can use any cheese, but it’s best to mix two kinds: sulguni and a softer, brined-type cheese similar to feta or Adyghe-style cheese. Take the kefir out of the fridge in advance so it comes to room temperature. This amount makes one flatbread; if you have a big family, feel free to make three batches.
Step 2
Grate the cheese on a coarse grater into a suitably sized bowl. I used only sulguni - dry and moderately firm.
Step 3
Add a raw egg to the bowl with the grated cheese.
Step 4
Pour kefir into the cheese and egg. Mix well.
Step 5
Sift the flour, add it to the batter, and mix. The batter should be like thick sour cream - go by consistency rather than the exact amount of flour.
Step 6
Heat butter in a skillet.
Step 7
Spread the batter in the skillet so you get a nice, even flatbread.
Step 8
Cook the lazy khachapuri covered over low heat. The top should dry out, and a golden crust should form on the bottom.
Step 9
Flip the flatbread and cook the other side.
Step 10
Let it cool slightly and serve, cutting into portions. You can garnish with herbs.
