Preparation
Step 1
Prepare the ingredients. You can use smoked chicken breast fillet, thighs or drumsticks, removing the meat from the bones. Boil the eggs in advance: carefully place them in boiling water and cook for about 8 minutes, then transfer to cold water and let cool.
Step 2
If making the mayonnaise yourself, pour 180 ml vegetable oil into a blender cup. Add 1 room-temperature pasteurized egg, ¼ teaspoon salt, 1 teaspoon sugar, ½ teaspoon mustard and 1 teaspoon lemon juice. Blend with an immersion blender until thick and smooth.
Step 3
The finished mayonnaise should be thick and creamy. Set it aside until needed.
Step 4
Cut the smoked chicken into small cubes and place it in a bowl.
Step 5
Add about 1½ tablespoons mayonnaise to the chicken and mix well.
Step 6
Drain the marinated or pickled mushrooms. Cut them into thin slices or small cubes. Marinated champignons work especially well.
Step 7
Grate the hard cheese on a medium grater.
Step 8
Peel the cooled eggs and separate the whites from the yolks. Grate them separately using a medium grater.
Step 9
Place a serving ring on a flat plate. Add the chicken mixed with mayonnaise as the first layer and smooth the surface with a spoon.
Step 10
Spread the chopped mushrooms over the chicken.
Step 11
Spread about 1–2 tablespoons mayonnaise over the mushroom layer.
Step 12
Add the grated egg whites as the next layer.
Step 13
Spread a thin layer of mayonnaise over the egg whites.
Step 14
Add the grated cheese as the next layer.
Step 15
Spread the cheese with another thin layer of mayonnaise.
Step 16
Finish with the grated egg yolks. Refrigerate the salad in the serving ring for 1 hour.
Step 17
Remove the salad from the refrigerator and carefully lift off the ring. Garnish with parsley, chopped green onions or dill, and arrange a few marinated mushrooms in the center before serving.
