Layered Pastries with Condensed Milk Cream
A fresh take on a classic layered dessert! These elegant pastries combine crisp, flaky layers with a smooth buttercream made with sweetened condensed milk. Rich, tender and beautifully coated in crumbs, they are perfect for a festive dessert table.

Preparation
Step 1
Prepare all the ingredients required for the flaky pastries and buttercream.
Step 2
Sift 19.4 oz of flour into a large bowl. Add 8.8 oz of butter that has been cut into pieces and frozen in advance.
Step 3
Mix the flour and butter well, chopping any large pieces of butter into smaller pieces with a knife.
Step 4
Pour 1 cup plus 1 tablespoon of cold water into a measuring jug. Add ¼ teaspoon of salt and 1 tablespoon of lemon juice, then stir.
Step 5
Pour the water mixture into the bowl with the flour and butter. Bring the ingredients together by hand to form a dough.
Step 6
Transfer the dough from the bowl to the work surface.
Step 7
Lift the dough from different sides toward the center and gather it into one piece. Avoid kneading it excessively.
Step 8
Shape the dough into a thick log and cut it into approximately equal pieces.
Step 9
Place the pieces of dough in a container and freeze for 30 minutes.
Step 10
Remove the container from the freezer.
Step 11
Place each piece of dough on a work surface dusted with flour.
Step 12
Gently flatten each piece and roll it into a very thin round.

Fold each round into quarters, dusting with flour as needed, then roll it out again to approximately ⅛ inch thick.
Step 14
Use a suitable cutter to cut the dough into pieces of the desired size. Reserve the scraps for making crumbs.
Step 15
Prick each pastry layer all over with a fork to prevent bubbles from forming during baking.
Step 16
Arrange the pastry layers and dough scraps on a baking sheet lightly dusted with flour. Bake in an oven preheated to 480°F for 5–7 minutes.
Step 17
Remove the baking sheet from the oven and leave the baked layers to cool completely.
Step 18
Place 7 oz of softened butter in a large bowl.
Step 19
Add 1 teaspoon of vanilla sugar.
Step 20
Beat the butter with an electric mixer until light and fluffy.
Step 21
Add 13 oz of sweetened condensed milk and continue beating until the cream is thick and smooth.
Step 22
Place the baked dough scraps in a large bowl and crush them by hand into fine crumbs.
Step 23
Spread a suitable amount of cream over each pastry layer.
Step 24
Stack 4 layers to assemble each pastry. You can adjust the number of layers according to your preference.
Step 25
Coat the sides of each pastry thoroughly with cream.
Step 26
Roll each pastry in the prepared crumbs and leave to stand for about 30 minutes.
Step 27
After 30 minutes, coat the pastries with crumbs once more and press them gently onto the surface.
Step 28
Place the finished pastries in a cool place for at least 3–4 hours so the layers soften and the flavors meld.
Step 29
Serve the chilled layered pastries as a dessert.
