Preparation
Step 1
Prepare the ingredients. You can adjust or replace some of them to taste. Use store-bought or homemade mayonnaise; for easier layering, transfer it to a piping bag if desired.
Step 2
Remove the skin and bones from the smoked chicken breast and cut the meat into small cubes. Smoked chicken thigh meat can be used instead.
Step 3
Hard-boil the eggs, cool and peel them, then cut into small cubes.
Step 4
Drain the pickled cucumbers well and cut them into small cubes.
Step 5
Rinse and dry the prunes, then cut them into pieces. If they are very dry and firm, cover with boiling water and leave for 10 minutes, then drain and dry.
Step 6
Toast the walnuts in a dry frying pan and roughly chop them with a knife.
Step 7
Grate the cheese using the coarse or medium side of a grater. Use any cheese you like; Tilsit-style cheese works well.
Step 8
Place a 6¼–7-inch serving ring on a serving plate. Add the smoked chicken as the first layer and spread with mayonnaise. Add the pickled cucumbers and another layer of mayonnaise. Sprinkle with chopped walnuts and add a little more mayonnaise. Follow with the chopped eggs and mayonnaise, then the prunes and mayonnaise. Finish with the grated cheese; do not spread mayonnaise over the top.
Step 9
Refrigerate the salad for 3–4 hours, or preferably overnight. Cover the serving ring with plastic wrap so the cheese layer does not dry out.
Step 10
Before serving, remove the serving ring. Garnish with walnut halves, cucumber slices and fresh herbs.
