Lavash with Sausage, Cheese, and Egg in a Frying Pan
Very quick and simple - a snack in minutes! Lavash with sausage, cheese, and egg in a frying pan is a great hot or cold appetizer. These thin lavash rolls, fried in oil, resemble small pies. Perfect for breakfast, a quick snack, or to take to work or a picnic.

Preparation
Step 1
You can use any kind of sausage - I prefer semi-smoked, but boiled sausage also works well. Avoid very hard dry-cured types. Choose cheese that melts easily. Boil the eggs in advance. I used two eggs and adjusted the other ingredients accordingly.
Step 2
Peel the sausage and cut it into small cubes. Alternatively, you can grate it on a large grater for a smoother filling.

Grate the cheese on a large grater.
Step 4
Peel the boiled eggs and grate them as well.
Step 5
Wash and dry the herbs thoroughly - excess moisture can make the lavash soggy. Finely chop the herbs. I used dill, but you can use your favorite greens or skip them.
Step 6
In a large bowl, combine all the chopped ingredients. Add a bit of salt and ground black pepper. Keep in mind that sausage and cheese are already salty, so don’t overdo it. Add sour cream (any fat content). You can replace it with mayonnaise - it will be richer, but also higher in calories.

Mix everything well - the filling should resemble a salad.
Step 8
Cut the lavash into squares (about 8x8 inches / 20x20 cm). I got 6 pieces - just enough for all the filling. Avoid making rolls too small or the filling will fall out. Scissors work great for cutting.

Place about 2 tablespoons of the filling along one edge of each lavash square.
Step 10
Roll the lavash into a tube. I didn’t fold the edges so the rolls wouldn’t be too thick.

You should get neat little rolls like this.

Preheat a frying pan over low heat, pour in a bit of vegetable oil - just enough to lightly fry without soaking the rolls. For a deeper golden crust, add more oil if you prefer. Place the rolls in the pan.

Fry on low heat until golden brown, then flip to the other side.

Remove the cooked rolls onto a plate lined with paper towels to absorb excess oil.

Serve the lavash rolls hot or cold - they’re delicious either way. Enjoy!
