Lamb with Chickpeas

Preparation
Step 1
How do you make lamb with chickpeas? Prepare all the necessary ingredients. Use lamb with a layer of fat.
Step 2
Rinse the chickpeas thoroughly until the water runs clear and soak them in warm water for 4–5 hours, or preferably overnight.
Step 3
Wash the lamb. Separate the fat from the meat and cut it into small cubes.
Step 4
Cut the meat into small pieces.
Step 5
Peel the carrot, rinse it, and cut into large sticks.
Step 6
Peel the onion and cut it into half rings. To keep the onion from stinging your eyes while cutting, rinse both the onion and the knife with cold water.
Step 7
In a cauldron or thick-bottomed pot, melt the lamb fat until crisp cracklings form. Transfer the cracklings to a plate.
Step 8
Add the meat to the cauldron and fry, stirring, until golden brown.
Step 9
Add the coriander, khmeli-suneli spice blend, paprika, and salt to taste, then mix.
Step 10
Add the onion and carrot to the meat. Fry everything together, stirring, for about 5 minutes.
Step 11
Drain the chickpeas, rinse them once more, and add them to the rest of the ingredients.
Step 12
Pour water into the cauldron. You may need a little more. The water should completely cover the contents of the cauldron or pot.
Step 13
Bring everything to a boil and cook covered, occasionally removing the foam, for about 45 minutes, until the chickpeas are tender.
