Kube Cake (Coconut Candy)

Preparation
Step 1
It is best to use fresh grated coconut, but unsweetened desiccated coconut is a great substitution.
Step 2
If using fresh coconut, crack it open, remove the flesh, and grate it finely.
If using dried coconut, soak it in a few tablespoons of warm water for 5-10 minutes to soften it slightly.
Step 3
In a non-stick pan, combine sugar and water over medium heat. Stir occasionally until the sugar dissolves, forming a light golden syrup.
Step 4
Add grated coconut, salt, and ginger or vanilla (if using). Stir continuously as the mixture thickens and the coconut absorbs the syrup. Cook for about 10-15 minutes, until it turns golden brown and sticky.
Step 5
Remove from heat and quickly spoon the mixture onto a greased tray or parchment paper. Shape into small rounds or squares using a spoon. Let cool completely - they’ll harden slightly as they cool.
Step 6
Once firm, enjoy your Kube Cake as a sweet snack or dessert.
