Korean-Style Pike He (Spicy Marinated Pike)
Unbelievably tasty, original, and spicy - no mayonnaise! Korean-style homemade pike he will decorate any festive table. It’s surprisingly easy to make; the key is giving it time to rest and soak up the aromas. It’s best to start 4-6 hours before serving.

Step 1
How to make pike he? Prepare all the necessary ingredients. Since pike is a freshwater fish, it may contain unwanted “guests” that can transfer to humans. If you’re not confident about the fish’s quality, it’s better to skip this dish. Some people say deep-freezing for 10 days destroys parasites - I can’t confirm this, but to be safer, freeze freshly caught fish first.
Step 2
Remove scales and innards from the pike and rinse under cold water. Cut off the fillets and remove even the tiniest bones (tweezers work well). Slice the fillet into strips 0.8-1 cm thick (about 3/8 in).
Step 3
Peel and mince the garlic, put it in a bowl, pour in the vinegar, and rub/mash well together.
Step 4
Place the fish in a container, add the garlic-vinegar mixture, and mix thoroughly so all the fish is coated. Close the container and refrigerate for 1 hour.
Step 5
Peel the carrot, rinse well in cold water, and grate it on a Korean-carrot grater. Or cut the carrot into thin matchsticks and put it in a bowl.
Step 6
Add salt and ground coriander to the carrot. If desired, add a little sugar - it gives a pleasant tangy note.
Step 7
Add chili pepper to the bowl with the carrot (use dried chili or finely chop fresh chili). Adjust the heat to your taste. Mix everything well.
Step 8
Add the carrot mixture to the marinated fish and mix. Close the container again and refrigerate for another 1 hour.
Step 9
Peel the onion and slice into half-rings. Pour vegetable oil into a skillet and heat over medium heat. Add the sliced onion.
Step 10
Fry the onion for 2 minutes, stirring.
Step 11
Immediately transfer the fried onion together with the oil into the container with the pike and carrot. Mix.
Step 12
Finely chop the dill, add it to the pike, and mix. Close the container and refrigerate for 1 more hour. After that, the pike he is ready. You can serve it with soy sauce and fresh vegetables.
