Korean-Style Chicken He with Carrots and Onions
A bright, spicy, and flavorful appetizer for holidays or every day! Korean-Style Chicken He turns out incredibly juicy and appetizing. It can be served as a main dish with a side or enjoyed as a snack. Beautiful both on a festive table and at a simple family dinner.

Preparation
Step 1
Pluck and clean the chicken, removing innards and singeing any remaining down. If frozen, thaw it in the fridge beforehand. Use red salad onions or shallots for a milder taste, though regular onions will also work.
Step 2
Boil the chicken until tender. You can cook it whole or cut into pieces first. I usually reserve the back for broth and don’t use it for this dish. Cover the chicken with cold water, bring to a boil, skim foam, salt, and simmer over medium heat until done.
Step 3
Meanwhile, prepare the vegetables. Peel onions and carrots. Halve bell peppers, remove seeds and cores. Use peppers of different colors for a brighter, more appetizing look. Rinse and pat dry.
Step 4
Grate the carrots on a special Korean-style grater. Slice the onions into thin half rings or strips.
Step 5
Slice the bell peppers similarly into thin strips.
Step 6
When the chicken is cooked, remove the pieces with a slotted spoon and place them on a plate to cool. The leftover broth can be used for soup.
Step 7
Heat vegetable oil in a skillet until very hot. You can add a halved onion to flavor the oil, then remove it.
Step 8
Put the chicken into a large mixing bowl and add the grated carrots.
Step 9
Pour the hot oil over the mixture.

Add the sliced onions.

Then add the bell peppers and finely chopped herbs (parsley, dill, or cilantro).

Add salt, sugar, and all the spices. Pour in vinegar.
Step 13
Mix everything gently but thoroughly. Taste and adjust salt or vinegar as needed. The flavor should be tangy, sweet, and salty. Cover and refrigerate for a few hours.

The longer it marinates, the better it tastes - ideally 4-5 hours or overnight.
