Kefir with Cucumber and Herbs

Preparation
Step 1
Use low-fat kefir, especially if you’re making a diet-friendly drink. Choose a natural, high-quality product from a trusted producer - it should bring both health and pleasure. The best cucumbers are young and bumpy; if unavailable, use regular ones. Adding salt and pepper is optional, but I like the extra flavor.
Step 2
Take your favorite herbs, wash them thoroughly, and dry them well - wet greens lose texture and taste quickly. I used dill, but parsley, cilantro, basil, celery, or lovage will work too. Use one type or mix several. Remove coarse stems, as they’ll interfere with drinking. Finely chop the greens. Don’t throw away the stems - freeze them to use later in soups or sauces.
Step 3
Wash and dry the cucumber. Cut off the ends and peel it (a vegetable peeler works best). Even for young cucumbers, I recommend peeling for a smoother texture. Taste it to ensure it’s not bitter - a bitter one can spoil the drink.
Step 4
Grate the cucumber on a fine grater (not to puree, but into thin strips). Avoid a coarse grater - it’ll make the drink harder to sip. Keep the juice that forms - it’s flavorful and nutritious.
Step 5
Pour the kefir into a large bowl for easy mixing. Add the grated cucumber and chopped herbs. Season with a pinch of salt and pepper if desired. Mix everything well.
Step 6
Pour the drink into glasses, garnish with cucumber slices and herb sprigs. Serve chilled. Enjoy!
