Kefir Sponge Cake for a Celebration Cake (with Baking Powder)

Preparation
Step 1
Prepare all the ingredients at room temperature to make a very tasty sponge cake.
Step 2
Start the batter: crack 2 eggs into a large bowl.
Step 3
Add 1/4 tsp salt and beat the eggs with a mixer.
Step 4
Add 200 g sugar (about 1 cup) to the beaten eggs.
Step 5
Beat with a mixer until the egg mixture becomes fluffy and pale.
Step 6
Add 1 tsp vanilla sugar.
Step 7
Pour in 100 ml vegetable oil (about 6 3/4 Tbsp / scant 1/2 cup).
Step 8
Mix everything on low mixer speed.
Step 9
Pour in 250 ml kefir (about 1 cup + 1 Tbsp) and keep mixing until you get a smooth liquid base.
Step 10
Sift in 400 g all-purpose flour (about 3 1/4 cups) in portions into the liquid base.

Add 10 g baking powder (about 2 tsp) in portions as well.
Step 12
Mix on low speed until the batter reaches the desired consistency.
Step 13
Prepare a suitable cake pan: wrap the bottom with foil, then line the bottom with parchment paper.
Step 14
Grease the inside of the pan with a little butter or vegetable oil. Pour in the batter and let it stand briefly so it spreads evenly in the pan.
Step 15
Bake in a preheated oven at 180°C (350°F) for 45-50 minutes. Then turn off the oven and keep the sponge inside for 5 minutes. After that, open the oven door slightly and leave the sponge inside for 15 more minutes.
Step 16
Remove the sponge from the oven, release it from the pan, place it on the table, and check doneness with a toothpick.
Step 17
Slice the sponge into cake layers of the thickness you need for assembling a celebration cake.
