Kefir Soda Flatbreads
Soft, fluffy and beautifully golden, these easy skillet flatbreads are a treat for the whole family. Their neutral flavor makes them suitable instead of bread, while extra sugar or powdered sugar turns them into a simple dessert.

Preparation
Step 1
Prepare the ingredients. Use all-purpose flour and kefir of any fat percentage. The amount of flour will depend partly on the thickness and moisture content of the kefir. Bring the kefir to room temperature beforehand.
Step 2
Pour the room-temperature kefir into a deep bowl. Add the baking soda, sugar and salt and mix well. Leave for 5 minutes; the mixture will foam vigorously and may increase to 2–3 times its original volume, so make sure the bowl is large enough.
Step 3
Gradually add the sifted flour and knead into a smooth, soft and airy dough. Begin with approximately 2½ cups of flour, then add the rest a little at a time. You may need slightly more or less depending on the flour and the consistency of the kefir.
Step 4
Avoid adding too much flour, as this will make the dough dense and the cooked flatbreads tough and less likely to puff up. The dough should remain soft and may be slightly sticky. It is better to lightly flour the work surface and rolling pin while shaping.
Step 5
Lightly dust the dough with flour and roll it out to a thickness of ½–¾ inch. Cut out even rounds with a glass or cutter; the original recipe yielded approximately 20 pieces. Alternatively, shape the dough into a log, divide it into 20 pieces and flatten each one into a round by hand.
Step 6
Heat enough vegetable oil in a frying pan over medium-high heat to form a layer approximately ¼ inch deep. Fry the flatbreads for 3–5 minutes on each side, until puffed and golden. If the oil begins to splatter heavily, reduce the heat slightly and use a splatter screen.
Step 7
Transfer the cooked flatbreads to a serving plate. Sprinkle with powdered sugar, if desired, and serve.
