Kefir Skillet Cheese Flatbreads

Preparation
Step 1
How to make kefir cheese flatbreads? Measure the ingredients. Take the kefir out in advance so it comes to room temperature.
Step 2
Sift the flour into a wide bowl to aerate it. The flatbreads will be softer and the dough more uniform.
Step 3
Combine the flour with baking soda. Mix well so the dry ingredients are evenly distributed.
Step 4
In a large bowl, mix the kefir with salt.
Step 5
Add about 3/4 of the sifted flour and stir with a spoon.

The dough is still too sticky and tacky.
Step 7
Add flour in small portions, mixing the dough with your hands. You may need more or less flour than stated - this depends on the flour’s quality and properties. Judge by the dough’s consistency.
Step 8
The dough should become uniform, smooth, and soft. It shouldn’t be too stiff, but it must hold its shape. Wrap the dough in plastic wrap or cover with a towel and leave on the counter for 30 minutes. During this time the gluten relaxes and the dough becomes more elastic and workable.

Meanwhile, prepare the filling. Any brined cheese (like feta-type cheese) or a hard cheese will work. You can use any herbs you like, or skip them.
Step 10
Grate the cheese on a coarse grater. You can mix several cheeses or use just one.
Step 11
Rinse and pat dry the herbs, removing any thick, tough stems. Finely chop the herbs.
Step 12
Combine the grated cheese and herbs and mix well.
Step 13
Roll the rested dough into a log. Divide it into equal pieces - how many depends on your preferred flatbread size.

Shape the cheese filling into balls, the same number as the dough pieces.
Step 15
Roll each piece of dough out on a floured surface into a round.

Place a ball of cheese filling in the center.
Step 17
Gather the edges of the dough over the filling and pinch to seal well.

Gently press the filled dough with your palm and carefully roll it out into a round again, taking care not to tear the dough. Choose the thickness as you like. Shape all the flatbreads this way.

The flatbreads are cooked in a dry skillet. Heat the skillet and fry a flatbread over medium heat until lightly browned, about 2 minutes on the first side.
Step 20
Flip and fry the other side until golden. They cook quickly, so it’s convenient to shape all the flatbreads first, then fry them. Adjust the time to your stove.
Step 21
Stack the cooked flatbreads so they stay warm longer. Right after cooking, brush the top of each one with butter.
Step 22
Serve warm. They’re also good cold. When reheated in the microwave, they’ll be just as soft and tasty as fresh from the pan. Enjoy!
