Kefir Semolina Cake
Fluffy, golden, airy, and incredibly tasty! Kefir semolina cake measured by cups is simple, quick, and filling. It can easily replace a full breakfast or dinner. A great dessert with tea or coffee for weekdays and holidays.

Step 1
How to make kefir semolina cake using cup measurements? Very easy! First, prepare the ingredients. Use all-purpose flour (fine wheat flour). Adjust sugar to taste. Use refined, neutral vegetable oil (I used sunflower). If you like, add 1 Tbsp vanilla sugar or a pinch of vanilla. Measurements are based on a 200 ml cup (about 0.85 US cup).
Step 2
In a bowl, combine room-temperature kefir, eggs, sugar, and semolina. Whisk well and let stand for 30 minutes so the semolina absorbs moisture. Optionally blend with an immersion blender for a smoother batter.
Step 3
Melt the butter in a double boiler or microwave and let it cool slightly. Add the melted butter and the vegetable oil to the semolina mixture and stir.
Step 4
Add sifted flour mixed with baking soda and beat with a mixer until smooth, breaking up any lumps. The batter will be fairly thick but still pourable.
Step 5
Any ovenproof pan will work. If using a silicone mold, you don’t need to grease it. For metal, ceramic, or glass, lightly grease with butter and dust with semolina or flour so the cake won’t stick. Pour in the batter. Bake in a preheated 180°C / 356°F oven for about 40 minutes. Check doneness with a skewer - it should come out dry.
Step 6
Remove the cake from the pan. If desired, dust with powdered sugar and serve. Enjoy!
