Kefir Plum Pour-Over Cake
Simple, tasty, juicy, tender, airy - perfect for the whole family! This kefir plum pour-over cake has an interesting composition: besides kefir, it also contains vegetable oil. Thanks to this, the cake turns out slightly moist with an incredibly soft texture. Combined with tangy plums, it’s a true delight!

Preparation
Step 1
Start by preparing all the ingredients. Use all-purpose flour. Kefir should be 3.2% fat. It’s best to use neutral refined sunflower oil, since olive oil can add unwanted bitterness. Use large eggs; if yours are small, add one extra.
Step 2
Prepare the plums. Rinse them, cut in half, and remove the pits. You can leave them as halves or slice them thinner—your choice. Any variety works, as long as the plums are firm enough to hold their shape during baking.
Step 3
Now make the batter. Whisk the eggs with sugar and vanilla sugar using a mixer until the mixture becomes fluffy and increases in volume 3-4 times.
Step 4
Add room-temperature kefir and sunflower oil. Mix again. The mixture will become thinner - that’s correct.
Step 5
Sift the flour and add it gradually, mixing on low speed or with a whisk until smooth. You may need more or less flour depending on egg size, kefir moisture, and flour quality. The batter should be thick yet pourable.
Step 6
Add the baking powder last and mix again.
Step 7
Pour the batter into a parchment-lined, buttered baking pan (mine is 24 cm / 9.5 inches). Arrange the plums on top. Bake in a preheated oven at 356°F (180°C) for 40-45 minutes. The surface should rise and lightly brown. Adjust time and temperature based on your oven.
Step 8
Remove the finished cake from the pan. Dust with powdered sugar if desired, slice, and serve. Enjoy!
