Kefir Dumpling Dough
Fluffy, airy dough for appetizing dumplings! Kefir dumpling dough is a simple recipe that needs only five ingredients. It’s quick to knead and very easy to work with. The dumplings turn out tender, appetizing, and delicious.

Step 1
How do you make kefir dumpling dough? Prepare the ingredients. Use high-grade wheat flour. Use kefir with at least 2% fat. Take the kefir out of the fridge 1-1.5 hours before cooking so it comes to room temperature - this makes the dough better. If you didn’t have time, gently warm the kefir or dilute it with hot water. Be careful so the kefir doesn’t curdle.
Step 2
For kneading, take a deep bowl that’s convenient for mixing dry ingredients with kefir. Sift the flour to remove any debris and to aerate it. For best results, add the liquid to the dry ingredients, not the other way around.
Step 3
In a separate container, mix kefir with salt and sugar until fully dissolved. Add baking soda and mix well.
Step 4
Make a well in the flour and pour in the liquid mixture (kefir).
Step 5
Start mixing gently, working only in the kefir and not touching the surrounding flour. This way the flour incorporates gradually and the dough becomes uniform.
Step 6
Continue kneading. If you’ve used up the flour but the dough is still quite runny, add a little more sifted flour. You may need more or less than the stated amount - judge by the dough consistency.
Step 7
Knead the dough thoroughly. When it becomes hard to stir with a spoon, transfer the dough to a dry, clean, flat work surface and continue kneading by hand.
Step 8
The dough should be slightly elastic yet tender and should not stick to your hands. Don’t make it too stiff, or the dumplings will turn rubbery. Knead the dough and let it rest so the gluten develops well. During this time you can prepare the filling and bring water to a boil for cooking the dumplings. I had a bit of flour left, which I used for shaping the dumplings.
