Kefir Chicken and Potato Pie

Preparation
Step 1
How do you bake a kefir chicken and potato pie? Prepare the necessary ingredients and various spices for a delicious filled pie.
Step 2
Pour 200 ml warm kefir (room temperature) into a small bowl, add 20 g fresh compressed yeast, and add 25 g sugar.
Step 3
Add 30 g wheat flour to the bowl.
Step 4
Mix everything until smooth and place the bowl in a warm spot for 15-20 minutes to activate the yeast.
Step 5
Crack 1 egg into a large bowl, add 40 g melted butter, and mix well.
Step 6
Pour the activated yeast mixture into the egg-butter mixture.
Step 7
Mix everything until smooth.
Step 8
Sift 300 g wheat flour into the liquid base in portions and add 1 slightly scant teaspoon of salt.
Step 9
Mix and knead the dough; if needed, add a little more flour.
Step 10
Continue kneading the dough by hand in the bowl for about 5-7 minutes.

Gather the dough into a ball, return it to the bowl, grease with a little vegetable oil, cover with a kitchen towel, and leave in a warm place for 1 hour.

For the filling, finely chop 300 g onion, place it in a bowl, and add salt to taste.
Step 13
Mash the onion with a masher until it releases juice, then add dried herbs, cumin, and coriander to taste, and mix.

Add 500 g chicken fillet cut into pieces to the onion and spices.

Add 400 g potatoes cut into small cubes and mix everything well.

Add a black-and-red pepper mix to taste, mix again, and set the filling aside.

After the time has passed, place the risen dough onto a lightly floured work surface.

Punch down and shape the dough, then divide it into a larger and a smaller piece.

Press and roll the larger piece into a round about 2 mm thick.

Wrap the round around a rolling pin, transfer it to a baking pan that has been greased with a little vegetable oil, and lay it in.

Spread the dough evenly in the pan and form sides.

Sprinkle the dough with a small amount of breadcrumbs.

Stir the filling once more and spread it evenly in the pan.

Place 30 g butter on top of the filling in small pieces.

Roll out the second piece of dough into a thin round, transfer it, and place it over the filling.

Seal the edges of the two dough layers well, decorate with decorative dough work, and make a small hole in the center.

Place the dough decorations on top of the pie and proof it in a warm place for 30 minutes.

Bake in a preheated 175°C (347°F) oven for 1 hour. Remove the pan and brush the top with an egg yolk beaten with milk, then return to the oven, reduce the temperature to 150°C (302°F), and continue baking for another 20-30 minutes until fully done.

Remove the finished pie from the pan and place it on the table.
