Kale and peanut pesto pasta
A quick and comforting pasta recipe tossed in a creamy kale and peanut pesto, finished with cheese and black pepper for an easy midweek meal.

Preparation
Step 1
Cook the spaghetti according to the packet instructions in a saucepan of boiling, lightly salted water. Once cooked, drain well, reserving some of the pasta cooking water, then return the spaghetti to the saucepan.
Step 2
While the pasta is cooking, put the kale, peanuts and garlic into a blender or food processor and blitz until very finely chopped. Add the cheese, olive oil and a ladle of the reserved pasta cooking water, then blend again until smooth and creamy. Season the pesto with salt and pepper to taste.
Step 3
Add the pesto to the spaghetti and stir over a medium heat for 1–2 minutes, until the sauce is heated through and evenly coats the pasta. Spoon into bowls and serve with extra grated cheese and a generous grinding of black pepper.
