Preparation
Step 1
For frying in batter, pork loin, sirloin or tenderloin works best. Start by making the batter. How to make the batter? Take a large bowl, pour in the milk and crack in the eggs.

Add salt and spices.

Then gradually add flour while whisking, and begin to form the batter. Watch its consistency.
Step 4
The batter should be a bit thick, similar to pancake batter, and most importantly, smooth and without lumps of flour. If you add a little too much flour and the batter becomes too thick, just thin it with some milk.

Rinse the pork under running water and pat it completely dry with paper towels, otherwise excess moisture will prevent it from frying properly and it will stew instead. Cut the pork into small portion pieces, about 5×5 cm and roughly 1.5 cm thick. The size of the pieces strongly affects how well they cook through, so it’s best to keep them fairly small. Lightly pound each piece. There’s no need to salt the meat itself, the salt in the batter is enough.
Step 6
Dip each piece of meat in the batter one by one. The pieces should be completely submerged and well coated.

Heat a skillet until hot. Pour in some vegetable oil. Lay the pieces of pork in batter into the hot oil. Fry them over low to medium heat for 2-3 minutes.
Step 8
When the pieces are nicely browned, flip them over and fry another couple of minutes. Then cover the skillet with a lid and let the meat steam gently for a short time so the pork can finish cooking through.
Step 9
Place the cooked pork pieces in batter on a plate and serve. Garnish with fresh herbs if you like. Enjoy your meal!
