Step 1
Prepare the required ingredients. Chicken breast fillets are the most convenient choice, although you can also use bone-in chicken breasts. Chilled chicken is preferable, but properly thawed frozen chicken will work as well. The spices and seasonings can be dried, although fresh dill and garlic may also be used.
Step 2
If using bone-in chicken breasts, remove the bones and skin. Slice each fillet lengthwise into 2–3 pieces, depending on its size. Make sure the pieces are not too thin, or the chicken may become dry. Rinse the chicken pieces and pat them dry. Lightly pound them on one side with a meat mallet, taking care not to flatten them too much.
Step 3
Add the salt only at the end of cooking so the meat retains more moisture. Sprinkle the chicken breasts with paprika.
Step 4
Season with pepper, garlic powder and dried dill. Add soy sauce, if desired, to enhance the flavor and help distribute the spices evenly. Leave the chicken for about 5 minutes to absorb the seasonings. You can use any other spices you like.
Step 5
Heat the vegetable oil thoroughly in a frying pan. Add the chicken breasts and cook over low heat for about 5–7 minutes on each side. You may need to turn them a couple of times. Season the cooked chicken with salt, reduce the heat to the lowest setting and cover the pan. Cook for about 7 more minutes, then remove from the heat.
Step 6
Serve the tender, juicy chicken breasts immediately. Pair them with a light fresh vegetable salad dressed with olive oil, roasted or boiled vegetables such as broccoli, green beans or cauliflower, fluffy rice, quinoa, or pasta with a light cream or tomato sauce. You can also drizzle the chicken with lemon juice or spoon over the juices remaining in the pan.
