Juicy Oven-Baked Pink Salmon with Vegetables

Step 1
How do you bake pink salmon with vegetables so it’s juicy and tender? Prepare the needed ingredients. I used fish fillet already cleaned of skin and bones; you can also use steaks. Choose any vegetables, preferably different colors so the dish looks bright. Olive oil can be replaced with any vegetable oil. Use herbs and spices to taste. If the green beans are frozen, thaw them in advance at room temperature.
Step 2
Salt the salmon fillet on both sides and sprinkle with basil. Drizzle with lemon juice and pour over part of the olive oil. Cover the fish and leave to marinate for 30-40 minutes. Marinating makes the salmon juicier and tastier.
Step 3
Wash and pat dry the bell pepper. Remove the seeds and stem, then cut the pepper into thick strips.
Step 4
Slice the peeled red onion into thin half-rings. If the onions are small, slice into rings. You can cut the vegetables differently (for example, into cubes), but don’t make the pieces too small so they don’t overcook and still keep their shape while baking.
Step 5
In a bowl, combine the prepared onion and pepper with young green beans and olives. Drizzle with the remaining olive oil, add aromatic herbs, and mix well.
Step 6
Place the salmon fillet pieces snugly next to each other on the bottom of a baking dish.

Spread sour cream over the fish. This will make it more tender.
Step 8
Wash and pat dry the tomatoes. Slice them into rounds. Choose meaty, thick-walled tomatoes so they don’t turn into a shapeless mass while baking. Arrange the tomato slices over the fish.
Step 9
Evenly spread the vegetable mixture on top. Cover the dish with foil so the vegetables don’t dry out.
Step 10
Bake in an oven preheated to 180°C (356°F) for about 30 minutes. Remove the foil 10 minutes before it’s done. Adjust the time based on your oven.

Serve the salmon with vegetables as a main dish, or pair it with boiled potatoes or fluffy rice. Enjoy your meal!
