Preparation
Step 1
How to bake juicy pink salmon with potatoes: prepare the ingredients. My salmon was frozen - thaw it at room temperature first. Rinse, pat dry, and cut into pieces. Peel the potatoes and rinse them. If using new potatoes, you can scrub them well and leave the skins on.
Step 2
Slice the prepared potatoes into rounds.
Step 3
Use any oven-safe baking dish (glass, ceramic, or metal). Lightly grease the bottom and sides with vegetable oil and add the sliced potatoes, spreading them evenly. Season the potatoes with salt and spices - ground pepper or dried herbs work well.
Step 4
Place the salmon pieces on top of the potatoes.
Step 5
Peel the onion, rinse in cold water, and slice into rings. Spread the onion rings evenly over the fish.
Step 6
Pour sour cream evenly over everything. If the sour cream is thick, dilute it slightly with water. Add a bit more salt and fish seasoning to taste.
Step 7
Wash the tomatoes, slice into rounds, and lay them over the sour cream layer.
Step 8
Generously sprinkle the top with cheese grated on a coarse grater.
Step 9
Cover everything with a sheet of foil and crimp the edges so the sides are sealed and heat doesn’t escape. Bake in a preheated oven at 180°C (356°F) for about 50-60 minutes (adjust to your oven).
Step 10
After that time, remove the foil. Fish cooks fairly quickly, so check the potatoes for tenderness. If the potatoes are done, take the dish out of the oven.
Step 11
Pink salmon baked with potatoes under foil is ready! Plate and serve. Enjoy!
