Preparation
Step 1
How to bake a juicy turkey breast in foil? Prepare all the ingredients. Use higher-fat kefir - the fattier it is, the softer the meat will be. If using a ready-made spice blend, read the ingredient list: many mixes already contain salt and pepper, so adjust to avoid over-salting or over-peppering.
Step 2
Rinse the turkey fillet under running water and pat it very dry with paper towels. Using a sharp narrow knife, make small cuts all over the surface of the meat.
Step 3
In a deep bowl suitable for marinating, pour in the kefir. Add lemon juice and spices. Mix well. Use any spices you like.
Step 4
Place the turkey fillet into the marinade so it is fully covered. Marinate for 1-1.5 hours at room temperature; if longer, refrigerate. The longer it marinates, the more tender it will be. If possible, leave it in the fridge overnight.
Step 5
Remove the turkey from the marinade and place it on a double sheet of foil.
Step 6
Wrap the meat tightly in the foil so juices won’t leak during baking, and place it on a baking sheet.
Step 7
Bake in a preheated 200°C / 392°F oven on top+bottom heat with convection for about 40 minutes. Then open the foil, brush the meat with the remaining marinade, and return it to the oven. Bake until a browned crust forms, about 25 minutes more, occasionally basting with the juices from the bottom of the pan. Adjust time and temperature to your oven.
Step 8
Transfer the cooked turkey breast to a plate, slice into portions, and serve with any side dish. Enjoy!
