Jam Crumb Shortbread Pie
Crisp, crumbly and easy to prepare! This jam-filled shortbread pie is an affordable bake for any occasion. Use homemade or store-bought jam – either way, the result will be delicious.

Preparation
Step 1
Prepare the ingredients. Use good-quality all-purpose flour. If the eggs are large, use the amount stated in the ingredient list. If they are small, you can use 3, although you may then need a little more flour.
Step 2
Beat the softened butter with the sugar using an electric mixer until pale and fluffy. Adjust the amount of sugar according to the sweetness of the jam. If the filling is already very sweet, you can use less.
Step 3
Add the room-temperature eggs and beat again until evenly combined.
Step 4
Sift in the flour together with the salt, baking powder and vanilla. Knead into a soft, elastic shortbread dough, adding a little more flour if necessary. The dough is ready when it pulls away from the sides of the bowl and no longer sticks to your hands.
Step 5
Divide the dough into 2 unequal portions. Shape the smaller portion into a ball, place it in a bag or wrap it in plastic wrap and freeze for 30 minutes.
Step 6
Roll the larger portion of dough on parchment paper into a moderately thick rectangle approximately the size of your baking sheet.
Step 7
Spread the jam evenly over the dough.
Step 8
Coarsely or medium-grate the chilled portion of dough evenly over the jam. Bake in an oven preheated to 350°F for about 20 minutes, or slightly longer, until the pie is cooked through and lightly golden.
Step 9
Leave the baked pie to cool, then cut it into individual pieces with a sharp knife.
