Preparation
Step 1
How to freeze apples for winter in the freezer? Very easy! Prepare the apples. Choose apples depending on what you’ll use them for. Small and medium apples are great for baking, while large ones - just like any others - work well for compote. Use firm apples with no signs of spoilage. Wash the fruit well under running water and pat dry.
Step 2
For storing frozen apples, you can use regular bags, but zip-top bags are best, or use vacuum sealing. I recommend getting a simple vacuum sealer - easy to use, and food keeps much longer and won’t absorb each other’s odors.
Step 3
For compote, cut apples into large wedges or cubes, removing the core. Line a baking tray or flat dish with plastic wrap and lay the pieces in a single layer. If you have a lot, make several layers, separating each layer with plastic wrap. Freeze for 3-4 hours.
Step 4
Then, after freezing, they won’t stick together; the pieces will be separate and easy to pour into a bag. Put them back into the freezer until fully frozen.
Step 5
Apples you plan to use for baking (for example, apple charlotte) cut into quarters and remove the core. Slice into wedges and place on a tray lined with plastic wrap in a single layer. If you like, sprinkle sugar over the top. Freeze until completely solid, at least 3-4 hours.
Step 6
After freezing, they slide off the plastic wrap easily.
Step 7
It’s best to store this prep vacuum-sealed in a thin layer, because apple slices are thin and easily absorb other smells from the freezer.
Step 8
Sometimes you need apple halves for baking. For this, take small apples, cut them in half and carefully remove the core. Place them cut-side down on plastic wrap in a single layer and freeze. Freeze for at least 5-6 hours.
Step 9
Transfer the frozen halves into bags and return to the freezer. I prefer storing them in vacuum bags. Our frozen fresh apples are ready.
