Hot and Spicy Shrimp
Quick stir-fried shrimp cooked with ginger, garlic, peppers and lemongrass, tossed briefly for a fragrant, light and flavourful dish.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Clean the shrimp, then season with grated ginger and salt. Leave to marinate for 10 minutes.
Step 2
Heat a wok and fry the shrimp in batches, making sure not to overcrowd the pan. Cook for about 2 minutes, then remove and set aside to drain.
Step 3
Preheat another pan with a drizzle of olive oil. Add the lemongrass stalk and fry over a medium heat for 2 minutes, then remove and discard.
Step 4
Add the garlic to the pan and fry until just beginning to turn golden, then remove and set aside.
Step 5
Stir-fry the chopped peppers with the shallots for a few minutes until slightly softened. Return the garlic to the pan, then add the spring onions.
Step 6
Add the fried shrimp back to the pan and toss everything together for no more than 1 minute.
Step 7
Turn off the heat and serve hot or warm.
