Step 1
How do you make pastries from honey layers with cream cheese frosting? To prepare the honey dough, take a large saucepan and combine the eggs, sugar, and honey in it. Mix everything well. Then add the butter and place it over the heat. Stirring constantly, bring the mixture to a boil and immediately remove it from the heat.

Immediately add the baking soda and stir. The mixture will begin to foam and increase in volume. Leave this mixture to cool to room temperature.
Step 3
Sift the flour for the dough through a sieve. Then add it to the honey mixture and knead the dough. Do not add extra flour, otherwise the dough will become denser and heavier. It will stick to your hands a little. That is how it should be. Put the dough into a bag and place it in the refrigerator for 1-2 hours. During this time it will rest and stop sticking to your hands.
Step 4
Roll out the rested dough to about 0.3-0.4 cm thick, about 1/8 inch, and cut shapes from it according to the size of the pastries you want to make. Mine will be round pastries. Prick them a little with a fork so they do not puff up during baking. It is most convenient to roll the dough out directly on baking paper so you can transfer the pieces to the baking tray together with it. Place the tray into an oven preheated to 180°C (350°F) for a few minutes. Cool the baked pieces.
Step 5
To make the cream, combine the cream, at least 33% fat, with the powdered sugar. Turn the mixer on to low speed so the powdered sugar dissolves. Then switch to maximum speed and whip until you get a fluffy cream. Then add the cream cheese and fold it into the cream.
Step 6
Using a piping bag, pipe the cream onto half of the pastry pieces.

Then cover them with the second halves and pipe cream on top as well. Put the pastries into a box so they stay covered and place them in the refrigerator for a few hours. This is necessary so that the moisture from the cream soaks into the honey layers instead of escaping into the air.

The finished pastries hold their shape very well, but they become very tender and soft. Decorate them to your taste. Enjoy your tea!
