Preparation
Step 1
How do you make Tula gingerbread at home? Prepare the ingredients, first for the dough. You can use butter instead of margarine. Choose natural honey, without additives, preferably runny if possible. Make the dough. Pour the granulated sugar into a deep heatproof bowl, add the chicken eggs, baking soda, a little cinnamon, and honey. Mix all the ingredients until smooth. A whisk is enough; you do not need a mixer.
Step 2
Then add the already softened margarine to the same bowl. If you did not take it out in advance, grate the margarine, then add it to the other ingredients. Once all the ingredients are well mixed, place the bowl with the mixture over a suitably sized saucepan of boiling water for 10–15 minutes. Stirring constantly, cook the mixture over a water bath until it becomes smooth and airy.
Step 3
Add about 1 cup of flour, sifted through a sieve, to this mixture. Mix well and let the resulting mixture cool. To speed up the process, you can place the bowl with the dough in cold water for 10 minutes, stirring it from time to time. Into the slightly cooled but still warm dough, gradually add another 1 1/2 cups of flour, sifted through a sieve. It is important to sift the flour to enrich it with oxygen. Then the baked goods will be airy and rise well during baking.
Step 4
Knead the dough first with a fork, then with your hands. Keep in mind that you may need more or less flour, so judge by the dough itself and add the flour in parts. The dough should hold its shape well, but still be soft and elastic.
Step 5
Dust the work surface with flour so the dough does not stick. Roll the prepared dough into a square sheet. It should be about 0.5 cm / about 1/4 inch thick. Cut the rolled-out sheet into equal-sized squares. I got 9 pieces.
Step 6
Place thick jam on one half of each square, then cover it with the other half and press the dough well around the edges so the filling does not leak out. If desired, you can make the gingerbread prettier using simple tools, such as a fork or special dough cutters. Choose thick, seedless jam.
Step 7
You can also decorate the tops of the gingerbread with any pattern using special cutters or pieces of dough. Then place the prepared gingerbread on greased baking paper. Meanwhile, preheat the oven to 180°C / 356°F. Bake the gingerbread at this temperature for 10–12 minutes.
Step 8
Make the glaze. How do you make the glaze? Mix the granulated sugar and milk in a small saucepan. Place the saucepan over medium heat and stir until the sugar dissolves. Bring the mixture to a boil and boil for 5–6 minutes. Brush the freshly baked gingerbread with the glaze and let it cool. Then serve. Enjoy!
