Preparation
Step 1
Toast the sesame seeds in a large frying pan, stirring continuously until they begin to change colour; this step enhances the tahini’s flavour.
Step 2
Move the toasted sesame seeds to a food processor and blend for about 1 minute, just until a crumbly paste forms.
Step 3
Slowly drizzle in the oil while blending, adding a little at a time, until the mixture becomes smooth and creamy. You may not require the full amount of oil. Season with salt to taste. For an extra silky result, push the tahini through a sieve using the back of a spoon before transferring to a container.
Step 4
Spoon the finished tahini into a covered container and store in the refrigerator for up to 1 month.
