How to make homemade mustard from powder with pickle brine? First, prepare all the ingredients. You’ll need only three: mustard powder, refined vegetable oil, and brine. The brine can be any kind - pickle brine, tomato brine, or sauerkraut brine. The richer and hotter it is, the more vivid the mustard will taste. Use only fresh mustard powder.
Step 2
Put the mustard powder in a bowl and gradually pour in warmed brine, stirring. Don’t pour all the brine in at once - it will be hard to mix without lumps, and you won’t be able to control the thickness. Since brine already has plenty of flavor, you won’t need to add salt, sugar, or vinegar. If you want, you can make the flavor more interesting by adding hot pepper, applesauce, tomato sauce, or honey.
Step 3
Pour the vegetable oil into the bowl and mix. The oil will soften the flavor and make the mustard velvety, and it will be easier to spread when eating. You can also add nutmeg or ground cloves. Transfer to a jar, close tightly, and leave at room temperature for 8 hours to mature. Then refrigerate and store in the fridge.
