About 10 min.
Preparation
Step 1
Very simple! First, prepare the ingredients. Choose higher-fat milk - the drink will taste better. I used milk with about 6% fat. Since the water won’t be boiled, use clean drinking water right away. Use any sugar and add it to taste. I used cane sugar and added 1 tsp for 2 servings. You can replace sugar with honey.
Step 2
Pour the milk into a small saucepan or a thick-bottomed pot and set over low heat. Warm it to 80°C / 176°F. Stir occasionally with a spatula so the milk doesn’t scorch on the bottom.
Step 3
In another small saucepan, pour in the water and heat it over medium heat to 80°C / 176°F as well. It’s best to use neutral-tasting filtered or bottled water. To warm the water and milk to the right temperature without overheating, use a kitchen thermometer.
Step 4
While the water and milk are heating, mix the matcha powder and sugar in a small bowl (or a matcha bowl).
Step 5
Pour the hot water (at the right temperature) into the bowl and whisk with a whisk or a bamboo matcha whisk until the matcha powder and sugar fully dissolve. Matcha is sold in different grades (regular, premium), and the color can range from pale green to deep emerald - this affects the final color of the drink.
Step 6
Pour the matcha mixture into cups or handled glasses. I used thin glass cups because the mixture cools slightly while whisking.
Step 7
Froth the warm milk with an immersion blender or milk frother until you get a fluffy foam. If using an immersion blender, pour the milk into a tall blending cup to prevent splashing. You can also use a countertop blender.
Step 8
Top the matcha in the cups with the frothed milk, then spoon the remaining foam on top. The matcha latte is ready. Serve right away while it’s warm - it's also very tasty cold. For variety, sprinkle a little matcha powder or cinnamon on top. Enjoy!
